This is a recipe that I have been making for years! As with most of my cooking I love making a large batch for leftovers and to add to other meals! You can use leftovers crumbled up in pasta sauce, over salads or just as is for another awesome meal! A great money saving trick I discovered early on was making my own ground chicken! It takes just a few minutes of extra work!
Supplies:
- Large mixing bowl
- Measuring spoons
- Grill
- Grill prep tray
- Grill Spatula
- Kitchen Aid Stand Mixer with Meat Grinder Attachment
Ingredients:
- 2 lbs ground chicken or make your own ground chicken with 2 lbs chicken breast cut into chunks or chicken tenders. See instructions below.
- 2 tablespoons Onion, Garlic and Salt Free Greek Seasoning
- 1 Tablespoon balsamic vinegar
Instructions:
- Preheat grill to 400F
- Do it yourself ground chicken:
- Attach meat grinder attachment to your kitchen aid stand mixer per instructions.
- Place bowl under the grinder attachment to catch the ground meat.
- Turn stand mixer on.
- Add chicken pieces and use compression tool to move through machine.
- Once ground chicken is ready, add seasoning and balsamic vinegar to the meat and mix well.
- Divide meat into equal portions and using your hands, make burger patties.
- Place patties on prep tray.
- Grill burgers 6 minutes per side or until internal temperature reaches 160F.
- Let rest for 5-10 minutes to complete the cooking process.
