Carrots are a nutrient power house! They are a great source of fiber, beta carotene, antioxidants, potassium, B vitamins and Vitamin K. The fiber in carrots is great for gut health and digestion. The antioxidants found in carrots have been linked to improved heart health, decreased cholesterol, improvement in the immune system and decreased risk of certain cancers such as prostate, colon and stomach cancer.
This recipe creates a carrot with a great glaze and a bit of spice with the seasoning.
Supplies:
- Cutting Board
- Cut resistant gloves
- 8 inch chef knife
- Large mixing bowl
- Sheet pan
- Parchment paper
- Measuring spoons
- Measuring cups
Ingredients:
- 2 lbs carrots
- 1 Tablespoon Garlic, Onion and Salt Free Thai Seasoning
- 2 tablespoon coconut aminos
- 1 teaspoon fish sauce
- 1/4 cup coconut vinegar
- 1 Tablespoon arrowroot starch
Instructions:
- Preheat oven to bake 425 F
- Line sheet pan with parchment paper
- Combine all ingredients except the carrots into a large mixing bowl
- Mix well to dissolve the arrowroot starch
- Add carrots and mix will with the marinade
- Lay coated carrots onto parchment paper
- Bake for 20-25 minutes or until carrots are fork tender
