My son Patrick loves a sporting competition! Whenever there is a big game scheduled for recess or in his sport leagues, he requests that I make “power meat” the night before. He is convinced that this is his power fuel and will help him win!
Patrick loves this “power” taco meat paired with an almond flour or whole wheat tortilla, used as a nacho topping or just plain by itself. My husband and I love it as a salad topping and paired with my plantain flat bread.
Don’t tell Patrick but a bonus of this recipe is the hidden vegetable! This is great for picky vegetable eaters like my son!!
This recipe makes a large portion and is great for leftovers throughout the week!
Supplies:
- Large Dutch Oven
- Wooden spoon
- Measuring spoon
- Measuring cup
- Can opener
Ingredients:
- 1 tsp olive oil
- 3 lbs. ground chicken or ground turkey
- 3 tablespoons tomato paste
- 2 tablespoons Patrick’s taco seasoning
- 28 oz canned diced tomatoes with juice
- 1 cup chicken or vegetable broth
Instructions:
- Coat the bottom of the dutch oven with olive oil.
- Heat dutch oven on medium.
- Add ground chicken/turkey and sauté until browned.
- Add taco seasoning and tomato paste and stir to coat the meat well.
- Add diced tomatoes and stir well.
- Add broth.
- Bring to a simmer.
- Allow mixture to simmer until all of the liquid has evaporated, stirring occasionally (about 20-30 minutes).
