2020 has been a year of a lot of outdoor time which for my family has meant a lot of time with the grill!! We have become slightly obsessed with the whole turkey on the grill and have decided to change things up totally this year and GRILL our Thanksgiving dinner including the turkey! It’s 2020, anything goes!
The spatchcock method to cooking a whole turkey is hands down the best way!! I have found this style of cooking allows for an even cook resulting in a juicier bird!

Supplies:
Ingredients:
- One whole turkey (10-12lb)
- 1 tablespoon olive oil
- 1 tablespoon Montreal Style Seasoning “The Charles”
Instructions:
- Preheat Grill to 450F
“Spatchcock” the Turkey”
- Remove all the parts within the cavity of the turkey.
- Place the turkey on a cutting board breast side down.
- Using the poultry sheers start on the R side and cut along the spine on the outer side from the tail to the neck.
- Repeat this on the left side.
- Press down on the wings until you hear a cracking sound. This is the sound of the breast bone breaking which will help the turkey to lay flat.
- Turn the turkey over so that it is now breast side up and flatten.
- Place turkey on baking sheet breast side up.
- Tuck the wings under the breasts.
Final Turkey Prep
- Pour one tablespoon of olive oil into your hands and massage over the turkey.
- Sprinkle seasoning over the turkey and massage into the turkey.
- On the gas grill, turn off 1 or 2 burners for indirect heat cooking, but ensure you can maintain the 450F cooking temperature.
- Place turkey on grill over the inactive burner(s) skin side up for 45 minutes.
- Rotate turkey 180 degrees, keeping skin side up and cook for 30 minutes.
- Check the temperature to get an idea of where the turkey is as far as doneness.
- Continue cooking for another 20 minutes (or less depending on size of turkey). During this final stage of cooking it is important to keep an eye on the temperature of the turkey to avoid overcooking.
- Cook until internal temperature of the turkey breast reaches 155F.
- Tent with foil and allow to rest for 15 minutes to complete cooking.
