This tamponade is an Italian twist on salsa! It is both sweet and savory! Use it to accompany meat, seafood, vegetables or just use a spoon!
Ingredients:
- 6 bell peppers (I used 2 yellow, 2 red and 2 orange)
- 6 oz black olives rinsed
- 6 oz green olives rinsed
- 1 tsp Italian Seasoning
- 2 lemons juiced
- 6 oz capers rinsed
Instructions:
- Preheat oven to 450 Bake
- Line a baking sheet with parchment paper
- Cut bell peppers into chunks and place on sheet pan
- Add olives to sheet pan
- Sprinkle on Italian Seasoning
- Bake olives and peppers for 20 minutes
- Once done, add peppers and olives to High Speed Blender (with pulse feature) or Food Processor
- Add capers
- Add lemon juice
- Pulse until blended well
