I am loving the flavor of dijon mustard lately. Just a small amount provides so much flavor to many vegetables, bell peppers being one of my favorites! This simple side comes together quickly and only requires 3 ingredients.

Supplies:
- Colander
- Bell Pepper Corer
- Cutting Board
- Sheet pan
- Parchment paper or Silicone Baking Mat
- Measuring spoon
- Mixing Bowl
- Mixing spoon
- Black Pepper Grinder
Ingredients:
- 6 Bell Peppers. I use 2 orange, 2 yellow and 2 red but you can use whichever you like the best!
- 1 tablespoon dijon mustard
- Fresh ground pepper- amount to your liking
Instructions:
- Preheat oven to roast 425 F.
- Line sheet pan with parchment paper or silicone baking mat.
- Using the bell pepper corer or a knife, remove stem and seeds from the bell peppers.
- Lay bell peppers onto the baking sheet open side down.
- Roast for 25-30 minutes.
- Once bell peppers are roasted, cut them into roughly 1 inch pieces and add to mixing bowl.
- Add dijon mustard and stir until bell peppers are coated well.
- Top with fresh ground pepper.
