Most people think of orange when they think of sweet potatoes. Did you know they come in different colors each with a different texture and taste. The white and purple sweet potatoes are less sweet compared to the orange flesh sweet potatoes and have a denser consistency. Eating a variety of colors of vegetables allows for increased variety of minerals, nutrients and antioxidants. You can find these varieties at your local Asian grocery store.

Ingredients:
- 1 lb Sweet Potatoes white flesh
- 1 lb Sweet Potatoes purple flesh
- 1 tablespoon Onion, Garlic and Salt Free Thai Seasoning
- 1 teaspoon + 1 teaspoon Olive Oil
Note- if you only have orange flesh sweet potatoes you can substitute.
Instructions:
- Preheat the grill to 450F
- Cut the sweet potatoes into cubes
- Place in mixing bowl
- Add seasoning
- Mix well
- Add one teaspoon of olive oil to the foil pan and coat the bottom and the sides
- Add sweet potatoes
- Place the foil pan on the grill uncovered
- Cook for 20-25 minutes (until soft) stirring halfway through
- When done, add remaining 1 teaspoon of olive oil and coat well
