I LOVE Thai food!! Like, LOVE LOVE Thai food! I have so many memories with my friends from my medical residency that took place at a local Thai restaurant. It was our place! I have worked for years to create my own Thai food at home. I have finally found a seasoning and ingredient combination that brings back the flavor and the memories! This recipe creates a perfectly textured chicken. When you take a bite you will initially be presented with the soft flavor of the chicken, but wait for it. After a few seconds you will feel the heat and spice that makes Thai food so delicious. Make this for friends and make some memories of your own.
Supplies:
Ingredients:
- 2 lbs chicken legs (quarters)
- 1 Tablespoon Garlic, Onion and Salt Free Thai Seasoning
- 2 tablespoon coconut aminos
- 1 teaspoon fish sauce
- 2 tablespoons coconut vinegar
- Juice of 2 limes
Instructions:
- Heat gas grill to low
- Combine all ingredients into mixing bowl
- Mix well to coat the chicken legs with the marinade
- Place the chicken legs on the heated grill
- Using a basting brush, brush on the marinade
- Cook on “Low” direct heat for 11 minutes
- Flip the chicken legs
- Add additional marinade using the basting brush
- Cook another 11 minutes or until crispy and to an internal temperature of 165F
