Grilled Whole Chicken with Salt, Garlic and Onion Free Montreal Style Seasoning

Grilled chicken is on the menu at my house every week!! I love to make 2 chickens at a time for leftovers to use throughout the week.  My Montreal style seasoning is perfect for chicken! The flavor is savory with a blast of spice thanks to the mustard in the recipe! I hope you enjoy!

Ingredients:

  1.  One whole chicken (3-4 lbs)
  2. 2 tablespoons Salt, Garlic and Onion Free Montreal Style Seasoning AKA “The Charles”

Instructions:

  1. Preheat grill to 450F
  • Butterfly the chicken:
  • Remove all the parts within the cavity of the chicken
  • Place the chicken on a cutting board breast side down
  • Using the poultry sheers start on the R side and cut along the spine on the outer side from the tail to the neck
  • Repeat this on the left side
  • Press down on the wings until you hear a cracking sound.  This is the sound of the breast bone breaking which will help the chicken to lay flat
  • Turn the chicken over so that it is now breast side up and flatten
  • Place chicken on grill prep tray
  • Tuck the wings under the breasts
  • Rub seasoning onto chicken
  • If using a gas grill, turn off 1 or 2 burners for indirect heat cooking, but ensure you can maintain the 450F cooking temperature
  • Place chicken on grill over the inactive burner(s) skin side up for 30 minutes
  • Rotate chicken 180 degrees, keeping skin side up
  • Cook until internal temperature reaches 160F (~15-30 more minutes)
  • Tent with foil and allow to rest for 15 minutes to complete cooking

Recipe Note:

If you do not have a grill you can make this in the oven at 425F

Place chicken in roasting pan over a roasting rack

Follow same cooking instructions
