This recipe is perfect for a simple summer meal! You can make this recipe on the grill or in the oven with little effort! There is a smoky flavor that comes with roasting or grilling eggplant which I just love! In this recipe I keep it simple with just the two ingredients. You can add some olive oil as well if you would like!
Ingredients:
- 3 large eggplant
- 2 tablespoons balsamic reduction
Instructions:
- Preheat grill or oven(roast) to 425 F
- Grill or Roast eggplant for 45 minutes, turning halfway through
- Once done, coarsely chop in bowl
- Add balsamic reduction
