Banana Peppers are a new vegetable for me! A few weeks back, these cute little peppers came in my farmers market box. I’ll be honest, I had no idea what there were or what to do with them! I tried grilling them up the same way I roast sweet mini peppers but they were a bit too spicy for my taste that way. Since I refuse to throw anything away I threw these in a blender and started looking around the kitchen to decide what to put in. I had a sauce in mind. I went heavy on the vinegar so I changed it to a “vinaigrette”. Since the peppers were spicy I wanted to cool it down with a little natural sweetness. I saw some oranges nearing the end of their life so in their juice went. Olive oil is always yummy, my husband really loves dijon mustard and I just love paprika, so it all went in! Turned on the blender until everything was smooth and there you have it, Roasted Banana Pepper Citrus Vinaigrette . You have just had a sneak peak at recipe development in my kitchen! Most things are by accident, I always forgot to write things down and my husband just shakes his head at the chaos that sometime works out and sometimes is an epic fail! This particular night while consuming this at dinner my husband took his phone out, opened the note app and said, “tell me what you put in it before you forget!”

Ingredients:
- 8 Banana Peppers
- 1 cup Apple Cider Vinegar
- 1/4 cup Olive Oil
- 1 tbsp Paprika
- Juice of 3 Oranges
Instructions:
- Preheat oven to 425 F Roast
- Line sheet pan with parchment paper
- While oven is heating, trim ends, cut lengthwise and remove seeds of peppers
- Place peppers on sheet pan and roast for 15 minutes
- While peppers are roasting add all other ingredients to high speed blender
- Once peppers are done roasting add to blender
- Blend until smooth
- Store in refrigerator
This has become my new go to for the summer! I make a batch every week after I pick up my farmers market box. I love it as a salad dressing as well as a marinade for chicken.
