This recipe is perfect for a quick vegetable side as well as meal prepping! The quantities below will make a large batch perfect to keep in the fridge to have on hand to throw on a salad or add some extra vegetables to dinner without having to cook them up again! This is one of my favorite ways to cook as it goes with my motto “cook once, clean once, eat multiple times!” I used black pepper for seasoning but you can change it up!
Supplies:
- Large sheet pan
- Cutting board
- 4 inch chefs knife
- Parchment paper
Ingredients:
- 2 lbs. cauliflower florets
- 2 lbs. broccoli florets
- 2 tsp black pepper (or seasoning of choice)
Instructions:
- Preheat oven to 425F Bake
- Line baking sheet with parchment paper
- Cut cauliflower and broccoli into florets
- Evenly distribute vegetables on parchment lined baking sheet
- Sprinkle black pepper
- Bake for 20-25 minutes
