Farm Fresh Tomato Basil Salad
This recipe is named after my mother. She always asks for this salad with dinner when she visits. My father is a wonderful gardener and grows rows of tomatoes for her despite his deep hatred for these beauties! Freshly picked tomatoes have such a unique flavor compared to the tomatoes you buy at the grocery store. Grocery store tomatoes are usually picked too soon in order to sustain long distance travel. It’s spring time now and the tomatoes are coming in for harvesting. Support your local farmer and pick some up.
Tomatoes are packed with nutrients and a great ingredient to add to your regular diet. Tomatoes are a great source of lycopene, Vitamins A, K and C, antioxidants and folate. Consumption of tomatoes has been linked to benefits of skin health as well as decreased risk for the development of heart disease and cancer.
Supplies:
- 4-inch chefs knife
- Cutting board
- Salad bowl
- Measuring spoon
Ingredients:
- 2 lbs. farm fresh tomatoes
- 1 bunch basil
- 1 tablespoon balsamic vinegar (more to taste)
- 1 tablespoon olive oil (more to taste)
- Fresh ground black pepper to taste
Instructions:
- Cut tomatoes into 1-inch sections
- Coarsely chop basil
- Add Oil and Vinegar. I cook with light amounts of oil and vinegar but you can adjust to your taste
- Mix well
- Season with black pepper to taste
