In this recipe I added a fun new ingredient- sweet potato nectar! Sweet potato nectar is made straight from sweet potatoes which makes it such healthy option when wanting to add a bit of sweetness to a dish. A very small 1 tsp serving was all I needed in this dish. You can always increase the amount depending on your desired level of sweetness.
Carrots are packed with health benefits such as:
1. Fiber which aids in digestion
2. Vitamins and minerals such as vitamin A, K, B vitamins and potassium
3. Contain antioxidants that are linked to benefits in eye health, decreasing cardiac disease and cancer risk
Supplies:
- Grill (if you do not have a grill you can roast these at 425F)
- Mixing bowl
- Measuring spoons
Ingredients:
- 2 lbs. carrots cut lengthwise
- 1 tablespoon fresh tarragon (or 1 tsp dried)
- 1 tsp black pepper
- 1 tsp sweet potato nectar
Instructions:
- Heat grill to medium high heat.
- Combine all ingredients into mixing bowl
- Grill carrots for 10 minutes on each side until fork tender
