For years I had tossed the greens from a bunch of beets. I never knew what their potential so in the trash they went. Through researching I learned that first, they are edible and second, they are PACKED with nutrients such as Vitamin A, K and C! They have now become one of my favorite types of greens. I love this fast grilling recipe for a fresh spring salad.
Supplies
- Grill (you can also roast at 425F if you do not have a grill)
Ingredients
- 2 bunches of beet greens
- 1 tablespoon of olive oil (or more to taste)
- Fresh ground pepper to taste
Instructions
- Heat grill to medium high heat
- Grill beet greens for 3 minutes per side
- Once done coarsely chop and place in bowl
- Add olive oil and mix well
- Top with fresh ground pepper
