How many of you are like me and have tried to take a vegetable peeler to a beet? I gave up after a minute of that! Although I now have realized I actually like leaving the skins on for a boost of fiber, my husband does not feel the same way. The key to getting those skins off with ease is roasting them first. Any size and quantity will do here. The cooking time will vary based on the size and the number you are cooking. This is a great method for batch cooking! You can store in the fridge and use throughout the week! I love having beets with my morning salad!
Health Benefits of Beets:
- Contain nitrates which have been linked to decreased blood pressure, improved endurance and energy, improved cognition and circulation
- Contain insoluble fiber which can help prevent constipation
- Full of antioxidants to decrease inflammation
- Contain vitamins and minerals such as B vitamins, vitamin C, potassium and folate
- Limited studies suggest possibility of cancer prevention. More research is being done on this
Supplies:
- Baking Sheet
- Foil
Instructions:
- Set oven to Roast 425F
- Wrap beets in foil in groups of 2 or 3
- Place foil packs on the baking sheet
- Roast for 45-60 minutes or until fork tender
- Once done, remove from oven
- Using oven mitts, remove foil and place beets into a colander
- Rinse beets with cold water
- Using food safe gloves or a wet paper towel gently rub the skin off the beets. The gloves/paper towel method protects you from having purple hands for the day!
- Discard beet skin
