This recipe is a twist I developed after making my Oven Dried Tomatoes. Just a few pieces can add so much flavor to a dish without the added sodium, preservatives or additives. Make a batch and store in the fridge to use in the same ways as the tomatoes such as on salads, vegetable dishes, as well as on meat and seafood dishes!
Supplies:
- Rimed baking sheet pan
- Wire baking rack
- Foil
Ingredients:
- 2 lbs. bell peppers mixed colors- red, yellow and orange
- Olive oil to grease baking rack
Instructions:
- Preheat oven to 200 F
- Line sheet pan with foil
- Place drying rack over the foil
- Use olive oil to grease the rack (I prefer to use an olive oil spray bottle for even distribution)
- Slice bell peppers into equal size slices
- Lay bell peppers onto the drying rack
- Bake in oven for 6-8 hours. Check at 6 hours and cook to your desired texture
