Greek Salad is one of my all time favorite foods! The addiction runs so deep that the night before I had my son, my best friend drove 30 miles to bring me the salad that got me hooked!! This recipe was inspired by my love for this dish and desire to be able to enjoy it anytime! In addition to using this as a salad dressing, try it on roasted vegetables as well as a marinade for chicken!
Ingredients:
- 1 cup red wine vinegar
- 1/4 cup olive oil
- 1 tsp dried lemon peel or zest of 2 lemons
- Juice of 2 lemons
- 1 tablespoon Greek Seasoning
Instructions:
- Combine all ingredients into a mason jar
- Shake well
- Store leftovers in airtight container in the refrigerator. The olive oil will most likely solidify in the refrigerator. When ready to use again set out for about 15 minutes ahead of time, shake well and serve.
