A slight twist on the usual lemon caper sauce! Serve with roasted veggies or a salad for a complete meal!
Supplies:
- Roasting pan
- Roasting rack
- Foil
Ingredients:
- 2 lbs chicken thighs
- ¼ cup lime juice
- 2 tablespoons capers rinsed
- 2 tsp Luck of the Irish Seasoning
- 2 tsp tapioca flour or arrowroot flour
- 1 tablespoon bone broth or water
Instructions:
- Preheat oven to convection bake 425F
- Prepare pan by placing foil in the bottom of the pan
- Place roasting rack on top of foil
- Add lime juice and 1 tablespoon of capers to the bottom of the roasting pan
Prepare the chicken:
- Add chicken to mixing bowl
- Add 1 tablespoon capers, 1 tsp tapioca flour, bone broth/water and Irish seasoning to the bowl mix well to coat the chicken
- Place chicken on roasting racks
- Roast for 30 minutes (or until temperature registers to 165F), flipping half way through.
When done:
- Add chicken to a mixing bowl
- Pour pan juice and 1 tsp tapioca starch over the chicken and stir to coat the chicken
- Plate to serving platter
