I first made these potatoes for a potluck 10 years ago!! 10 years later my dear friend Monica still talks about her love for them and desire to recreate the recipe. I now think of her and smile every time I make this dish! I smile mostly because I adore her, but also because I get such joy when I can share healthy recipes with family and friends and they truly love them. Healthy food is often thought of as boring and tasteless but it’s simple recipes like this which prove that is not the case.

Recipe:
Supplies:
- Covered baking dish
- 8-inch chef knife
- Cutting board
Ingredients:
- 2 large sweet potatoes- original recipe I made for Monica was with orange flesh sweet potatoes but purple and white flesh sweet potatoes substitute well here
- 1 tsp dried tarragon
- ½ tsp black pepper
Instructions:
- Preheat oven to Bake 425F
- Cut sweet potatoes into wedges
- Add tarragon and black pepper and stir to distribute
- Place in baking dish
- Cover
- Bake for 35-45 minutes- test with fork until soft
