What is a Rutabaga?
Rutabaga is a root vegetable. It is a cross between a cabbage and a turnip.
I only recently discovered this vegetable on my quest for an alternative to cauliflower rice!!!
When researching the details behind this funny looking vegetable I discovered the rutabaga has a host of health benefits. Rutabaga has been linked to:
- Improved digestive health
- Improved metabolism
- Cancer prevention
- Decreases in blood pressure and cholesterol
They contain a great variety of vitamins and minerals such as:
- Calcium
- Iron
- Potassium
- Vitamin C
- Vitamin E
- Vitamin K
The anti-cancer properties are from the high antioxidant level, and the high fiber nature of this vegetable aids in digestive health!
Need protein?? Don’t worry, it’s right here! One rutabaga has 4 grams of protein. Compare that to the 6 grams you will find in one egg. There are different ways to eat Rutabaga, such as fries, mashed, soups, noodles, simply roasted and riced!
Supplies:
- Cheese grater or Kitchen Aid Attachment Grater
- Mixing bowl
- Baking Dish
Ingredients:
- 1 Rutabaga- I leave the skin on for a fiber boost
- 1 cup chicken or vegetable broth
- 1 teaspoon black pepper
Instructions
- Preheat oven to bake 425 F
- Rice the Rutabaga into a mixing bowl
- Add broth and pepper and mix evenly
- Place in baking dish
- Bake for 20 minutes
