This is a great weeknight recipe as it comes together in just a few minutes!
Supplies:
Cast Iron Skillet
Wooden spoon
Ingredients:
⦁ 2 Zucchini cut lengthwise followed by inch pieces
⦁ 2 Yellow Squash cut lengthwise followed by inch pieces
⦁ 1 tsp black pepper
⦁ 2 tsp balsamic reduction
⦁ 1 tsp olive oil
Instructions:
⦁ Add olive oil to cast iron and heat pan
⦁ Once heated add zucchini and black pepper and stir
⦁ Cook, stirring often for about 5 minutes
⦁ If zucchini starts to stick you can add more oil. Other options are adding a small amount of broth to the pan
⦁ Add 1 tsp balsamic reduction and continue cook until cooked through (fork tender)
⦁ Once cooked add remaining 1 tsp of balsamic and stir
